In the labyrinth of the medina below, communal ovens still fire daily, spice merchants weigh saffron by the gram, and recipes for pastilla and preserved lemon pass from grandmother to granddaughter without ever being written down. The flavors here are layered the way the city itself is layered: Arab, Amazigh, Andalusian, Jewish, French, centuries of crossroads distilled into every tagine, every glass of mint tea, every handful of ras el hanout blended by hand in a souk that hasn't moved in 400 years.
